It seems that the UMA QoS method used is WMM Voice Priority, which relies upon a priority queue number being encoded in the packet. This website has some fantastic whitepapers that might get you started:

I haven't done anything yet, not being to terribly interested in the UMA feature at this point; I am/was after data wifi more than UMA.
