If you delete from one spot, it deletes it from the other.
That's what synchronization does. If yours isn't doing that, then it's broken.
Check to see if Wireless Synchronization is enabled.

That setting is only for messages. I should have been more clear on that.
With Address Book, it's straight two-way wireless synchronization... where everything in one endpoint is reflected in the other endpoint.
