I tried a few from this list:
http://www.xmpp.net/
and settled on using "nedbsd.nl". It seemed both stable, and random enough that the existing server load shouldn't be high.
As a side note, I've noticed that a few servers have an SMS transport available but I have, as yet, been unable to register those transports. Anyone know of a public jabber server with a working SMS transport? I'd love to be able to move my SMS conversations into the Google Talk client and out of my Messages list!
