Can anyone tell me what the differences are between the 8700vand the 8707v?

Okay, seriously, it has to do mainly with the radio, 3G versus GPRS/EDGE and some form factor and other hardware changes. I went to BlackBerry's UK website and this link should help you.
Yes as BJ says, the 8707v has both UMTS (3G) and GPRS - main thing this enables is that you can use the 8707v for email in Japan (the 8700 doesn't work). The 8707v does use a slower chip from Qualcomm vs an Intel chip in teh 8700v, so if you don't need 3G, you're probably better off with the 8700v. If you want to use it in Japan then get the 8707v.
