I have a Blackberry 9000, is there a way I can have different alerts for the email and text messages.

Welcome to the forums. Yes, there is. Click on your Profiles or Sounds icon and then scroll down to Set Ring Tones/Alerts.

I clicked on Profiles and only have options loud, vibrate, normal, phone only and off.

Does it open into a new screen or pop up a dialog on the main screen?

Sounds like OP simply needs to scroll down so as to see the edit profiles selection.
