Yes you can customize the notification through each of your "Profiles".

For a customized SMS, for EACH contact, you will need to set exceptions for those persons.

Scrap that, execptions are for Phone Calls, not SMS.

Yes, you do have to create new profile for EACH contact that you want a custom SMS or email alert for...
