I would try changing it on the default policy instead, and see if that works.

Finally a KB entry for EWSFindCountLimit:
KB23949-Calendar items disappear from BlackBerry smartphones after applying SP1 to Microsoft Exchange Server 2010

SP1 support for 5.0.2 is announced for within 2 weeks.

This appears to have worked. The two users I had problems with haven't had a Calendar related problem since updating the policy to include the -EWSFindCountLimit: NULL$ Good show Opie.
