I love the idea of bbm over bridge and email over bridge but where is text over bridge? Is there an app available to do this or plans for such?

You'll have to do it (sending, at any rate) via email. I don't recall the format, but it is in the general format of phone# @ carrier domain. But so far as PlayBook bridge only uses the data network via the BlackBerry smartphone, and not the voice, you won't be sending text message over the bridge.
