Wireless email dies, restart services, wireless calendar sync turns on

Will try to keep this brief, any help on any aspect of this would be very appreciated. It just seems obvious that we must going about something the wrong way. We're running BES for Exchange 4.1.5 (Bundle 79), mostly Curve devices running a couple different versions of Desktop Manager.
1 - Sometimes our wireless email sync just stops
...especially after restarting the BES server machine (Exchange is on separate machine), but even noticed this just using the BES Blackberry Manager to add a new user. The only way I know to fix this when it happens, and it works every time, is to restart Blackberry services through Control Panel >> Admin Tools >> Services. I typically take a shotgun approach and restart them all from top to bottom, but the most recent time I did only Router, Dispatcher, Contoller, Alerts in that order. I forced a Reconcile Now between each service restart but didn't notice anything working until the Alerts service was restarted. (Is there a magic service for the wireless email function?)
2 - Wireless calendar turns on
After restarting services like that, even just Router, Dispatcher, Contoller, and Alerts this last time, my users will have a problem with their calendar next time they hook up to Desktop Manager. For some reason, while Notes, Tasks, and Address Book all stay set up correctly, the Calendar switches to Wireless mode. This creates a major PITA for me as I have to sit down at each user's Desktop Manager, Configure Synch on each one to change to Outlook & set up the 2 or 3 mapped calendars, and carefully watch the synch process. Why carefully? Because almost without fail the sync will result in all kinds of crazy Add/ Delete/ Change differences on the Calendar step, all of which are mistaken and lead to duplicates and messed up records. (So I have to cancel the sync, go into Backup and Restore, clear out the handheld's Calendar, and re-sync.)
Luckily we're a small company with only half a dozen BB users, but still, this is not fun and getting to be very time consuming. Apologies for perhaps rolling multiple issues into one post, I thought it might be necessary. If a different sub-forum on this site would be better, please let me know.
