Sound Settings and Custom Profiles

So I have my phone set to normal, usually. I edited my custom sounds/profiles so that it would vibrate when I want, ring when I want, etc.
I was on vacation the other week and wanted to set it to "loud" so that I could hear everything, but I noted that simply my custom sounds/profiles settings were active and never changed.
Am I missing something here? on my old Pearl I could edit certain sound profiles as needed to do what I want, and each profile offered a different sound setting for each activity. Am I unable to do this on the Tour?
