Good news! You can edit the icons/text selections on the main screen.

Hold ALT (The * Key) and then click the scroll wheel. You can then move/hide items. Don't worry, they're easy to bring back later.

It isn't the * key, it's the Up/Down key far bottom left.

At least on my Bberry with the 'Default' theme

That is great, but what I don't like and don't think you can do is move Icons from one folder to another. Like, I want to move one of my applications from the applications folder to the home screen. I don't think it can be done unless someone has found a way.
