I used the ATL/press the scroll wheel function to hide an application. Obviously now it's gone, how do I bring it back? Also - how do I move something into folders and create new ones?

Click on another icon doing ALT+scroll, choose show all, and then go to the icon you hid and do ALT+scroll on that and then uncheck the Hide Application

If you are referring to moving an icon to a folder that is on the home page, I am unsure of if that can be done with Blackberries. I would have to defer to some of the members that have been around a while ;)

You cannot move icons/apps into or out of folders. Different themes have different folders, etc. You might try different themes until you find the one that's just right for you.
