Is there a way to set a default CC To: address when sending or replying to an email on the BlackBerry?

You can't do CC but you can do BCC. Go into the BIS webpage and setup Auto BCC for the email account.

I forgot to mention that this is going through a BES (4.1) and Exchange 2003. The user is on a MAC with Entourage and sent items don't really work. He wants a CC so he can keep track of emails he has sent when in Entourage.
