Default NON BES Encryption

Is there any way to have my data (email messages, address book, etc) encrypted on a 7520 without using a BES server?

Yes you can encrypt the contents of your BB - go to Options > Security, Enable the Password and Content Protection.

I don't believe that you can encrypte communications to your BB (e.g. over GPRS) without using BES.

Actually all GSM/GPRS traffic is encrypted. But as jax said, use content protection.
