When I back up my Bold, I get not only an IPD file but a zip file. If I have to restore anything, which one do I use? Not sure what to do with the zip file. Am I backing up correctly?

well i guess when u restore u use the IPD
and leave the zip file alone

Sounds like the IPD file is your basic core apps data and the ZIP file is third party apps and media you backed up, like pictures, music, ringtones, etc. I'm just guessin' here, but that's the way I'd do it if I were RIM.

The IPD is your databases and settings, the CAB (zip) file is the contents of the Bold's 1GB internal memory.
