I just upgraded from OS 4.something to the latest 5.whatever (at
the top of this forum). Only problem (to me) I've noticed is that
the "F" button used to be the keyboard shortcut to go to the profiles
(normal, loud, vibrate, etc) but now it does nothing. Is this a glitch,
or was this shortcut purposefully eliminated for some reason at some
point?

The shortcut was removed. Now if you press and hold the "q" button it will switch between the two most recently used profiles.

By default it will switch between Normal and Vibrate, but think of it as a "last channel" button on your TV, only for your BB profiles.

I bought the Verizon Wireless 9650 this weekend. I'm still getting used to the slight differences from my old 8330.

I was disappointed to find that the "F" shortcut was removed.

I found on the Verizon phone (I don't know about the other providers) you can scroll up to the profile icon and click on it and choose a profile from the pop up list.
