I just received my Telus BB 8830, and when I go to Options/Themes, I am given 3 choices:

Dimension Icons
Dimension Today
Dimension Zen

The Dimension Zen is the active theme, but on my 8830 that particular theme shows as the default, and quite boring, Telus default theme. I can switch back and forth between the first two themes, but the one I really want is the Dimension Zen theme, but as mentioned, every time I choose that theme, I only get that boring Telus theme.

If I pay to get this BB unlocked, will that open up and more themes for me? What other benefits is there to getting an 8830 unlocked?

Unlocking will not get you additional themes.

You will need to replace your ALX file as described in this link, scroll down to your model/carrier.

If you want the other carriers themes, search for theme unlocking. If you want other themes, there is an entire section of the forum dedicated to themes and wallpaper and rungtones and such.

Isn't the Telus (and Bell, and Sprint) 8830 unlocked already?
